Simply Delicious Grilled Shrimp

Ingredients:

  • 3 cloves of garlic, minced
  • 1/3 cup olive oil
  • 1/4 cup tomato sauce
  • 2 tablespoons red wine vinegar
  • 2 tablespoons fresh basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon cajun seasoning  (or cayenne pepper)
  • 2 lbs fresh, peeled, deveined shrimp
Cooking Instructions:

  1.  Combine garlic, olive oil, tomato sauce, red wine vinegar and cajun seasoning in a large bowl. Then top with salt and fresh basil.
  2.  Add shrimp, cover and marinate for 1 hour; stirring once or twice .
  3. Soak wooden skewers in water during this time
  4. Remove marinade and skewer shrimp
  5. Lightly oil grill grate and grill 2-3 minutes per side

"Stuffed Zucchini Boats"

So, thanks to my sweet grandmother, I have several GIANT zucchini and decided to try some new recipes with these bad boys. And thanks to pinterest, I got some very good ideas and found one that I could put my own spin on so that my entire brood could enjoy :) It's a very simple recipe with few ingredients. I hope you enjoy it as much as we did!

Ingredients
  • Large zucchini
  • 1lb lean ground turkey
  • 1 cup of cooked brown rice
  • 1/2 cup of chopped fresh basil
  • 3/4 cup shredded parmesan cheese
  • 1/4 cup chicken stock
  • 1 tsp chopped garlic
Preheat oven to 375

  1. Wash zucchini, cut in half (lengthwise)
  2. Microwave 3-5 minutes, scrape and hollow out inside with a spoon
  3. Saute garlic in about a tablespoon of olive oil, add and brown meat
  4. Add and combine the remaining ingredients (I left about 2 tablespoons of cheese to sprinkle on top)
  5. Stuff zucchini boats, sprinkle remainder of cheese on top and roast for 20-30 minutes

I was so hungry while making these I completely forgot to take pictures along the way :/
